  • 8 large Eggs Use farm-fresh eggs if you can!
  • 2 cups Cheese (cheddar and mozzarella mix) Feel free to switch it up with your favorites!
  • 1 cup Diced ham Deli ham works wonders, but cooked bacon or sausage are fantastic alternatives too!
  • 1 tsp Salt Enhances flavor.
  • 1/2 tsp Pepper Adjust according to your taste!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, beat the eggs and season with a pinch of salt and a crack of pepper.
  3. Grease a baking dish and layer the frozen hash brown patties evenly across the bottom.
  4. Carefully pour the beaten eggs over the hash browns.
  5. Sprinkle a generous layer of cheese followed by diced ham on top.
  6. Bake in the preheated oven for 35-40 minutes or until the eggs are puffed and golden.
  7. Once out of the oven, let it cool for a few minutes before slicing.

Notes

You can prep this casserole the night before! Just assemble it and store it covered in the refrigerator. Use a mix of cheeses for extra flavor. Let the casserole sit for a few minutes before serving to help it hold its shape. Feel free to add veggies like spinach or bell peppers for an extra punch of nutrition!
