Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a floured surface, unroll the puff pastry and spread a thin layer of Dijon mustard if using. Layer ham slices and sprinkle cheese evenly.
Roll the pastry tightly from the long edge into a log. Chill in the fridge for 5–10 minutes to firm.
Cut the roll into ½-inch slices. Place spiral-side up on the baking sheet.
