Dry Ingredients
  • 2 cups All-purpose Flour Can substitute with whole wheat for a nutty flavor.
  • 1 cup Sugar Coconut sugar can be used for a healthier option.
  • 1 teaspoon Cinnamon A warm hug of spice, sprinkle generously.
  • 1/2 teaspoon Salt Add a pinch for balance.
Wet Ingredients
  • 1 cup Pumpkin Puree Use 100% pure pumpkin for best texture.
  • 2 large Eggs Act as binding agents.
  • 1 teaspoon Vanilla Extract Use pure extract if possible.
Mix-ins
  • 1 cup Chocolate Chips Semi-sweet or dark chocolate pairs well with pumpkin.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, cinnamon, and salt.
  3. In another bowl, mix together the pumpkin puree, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and fold gently until just combined. Add the chocolate chips.
  5. Spoon the mixture into the prepared pan; smooth the top with a spatula.
  6. Bake for about 25-30 minutes, or until a toothpick comes out clean.
  7. Allow the treats to cool in the pan for around 10 minutes before transferring to a wire rack.

Notes

These treats are delicious on their own or paired with apple cider. Store in an airtight container at room temperature.
