- Start by mixing the softened cream cheese, pumpkin puree, cinnamon, and nutmeg in a bowl until creamy.
- Lay a tortilla flat on a clean countertop and spread the cream cheese mixture evenly across it.
- Lay out your thinly sliced bell peppers, olives, or other veggies in a row on the tortilla.
- Starting from one edge, tightly roll the tortilla up.
- Slice the rolled tortilla into pinwheel shapes, about an inch thick, and arrange them on a platter.
Notes
Make-ahead by wrapping tightly in plastic wrap for up to 2 days. Not ideal for freezing, but can be reheated in a skillet for a crispy texture.
