Ingredients
  

Main Ingredients
  • 1 lb ground turkey Lean and protein-packed
  • 2 tsp sesame oil For stir-frying
  • 3 cups broccoli florets Fresh or frozen
  • 1 small onion, small diced Adds flavor
  • 1 cup shredded carrots For color and crunch
  • to taste Salt and pepper For seasoning
Teriyaki Sauce
  • 1/4 cup soy sauce Or gluten-free soy sauce
  • 3 tbsp brown sugar Adjust to taste
  • 1 cup water, divided Used in sauce preparation
  • 2 tbsp honey For sweetness
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated or minced
  • 2 tbsp corn starch For thickening the sauce
  • 1 tbsp orange zest Adds citrus flavor

Method
 

Make the Teriyaki Sauce
  1. In a small saucepan over medium heat, combine 3/4 cup of water, soy sauce, garlic, ginger, honey, and brown sugar. Stir to mix and bring it to a low boil.
  2. In a separate bowl, whisk together 1/4 cup of water and cornstarch until smooth.
  3. Stir the cornstarch mixture into the saucepan and allow the sauce to thicken.
  4. Remove the pan from heat and stir in the orange zest. Set aside.
Prepare the Stir Fry
  1. In a wok or large skillet, add sesame oil and heat over medium-high.
  2. Add the diced onion and sauté until it softens.
  3. Add the ground turkey and cook until fully cooked, reaching an internal temperature of 165°F, about 7-10 minutes.
Add Vegetables
  1. Once the turkey is cooked, add broccoli florets and shredded carrots.
  2. Cook until the vegetables are heated through and tender.
Combine
  1. Lower the heat and pour the teriyaki sauce over the stir-fried turkey and veggies.
  2. Let it simmer for several minutes, mixing to coat everything well.
Serve
  1. Serve the stir fry hot over a bed of rice or quinoa.

Notes

For extra flavor and presentation, sprinkle with sesame seeds or green onions. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months.
