  • 8 slices challah bread Use thick slices for better texture.
  • 4-6 tablespoons butter For grilling the sandwiches.
  • 8 thick slices sharp cheddar cheese Use high-quality cheese for the best flavor.
  • 8 slices bacon (cooked) Crisp the bacon before adding it to the sandwich.
  • 1+ cup shredded cheese For extra cheesy goodness.

Method
 

Preparation
  1. Slice the challah bread into 1/2 or 3/4 inch slices, yielding 8 slices for 4 sandwiches.
Grilling
  1. In a wide nonstick skillet, heat about 2 tablespoons of butter over medium-low heat until melted.
  2. Place 2 slices of bread in the melted butter, ensuring both sides soak up the butter.
  3. On one slice, layer 2 thick slices of cheddar cheese, then top with the other slice of bread, butter side up.
  4. Add 2 strips of cooked bacon over the cheese.
  5. Sprinkle about 2 tablespoons of shredded cheese on top of the bacon.
  6. Melt another 1/2 tablespoon of butter in the pan.
  7. Carefully flip the sandwich over onto the melted butter, with cheese and bacon on the bottom.
  8. Cook on medium-low for 3-4 minutes until crispy.
  9. Add another 2 tablespoons of shredded cheese on top.
  10. Flip the sandwich so that the cheese side is down and cook until crispy, about another 3-4 minutes.
  11. Repeat the process with remaining ingredients until all sandwiches are grilled.

Notes

Serve hot with sides like tomato soup or salad. For added crunch, include pickles or chips.
