Ingredients
  

For the Grilled Bronzini
  • 2 whole bronzini, cleaned and scaled Fresh fish is recommended.
  • 2 tablespoons olive oil For brushing the fish.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Freshly cracked preferred.
  • 2 slices lemon For stuffing the fish.
  • 2 cloves garlic, minced For extra flavor.
  • 1 tablespoon fresh thyme Or herbs of your choice.
For the Side
  • 4 cups roasted seasonal vegetables Such as zucchini, bell peppers, and cherry tomatoes.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Rinse the bronzini under cold water and pat dry with paper towels.
  3. Rub the fish with olive oil, then season inside and out with salt and pepper.
  4. Stuff the cavity of each fish with lemon slices, minced garlic, and thyme.
Grilling
  1. Oil the grill grates to prevent sticking.
  2. Place the bronzini on the grill and cook for 5 minutes on one side.
  3. Carefully flip the fish using a fish spatula and grill for an additional 5 minutes, or until the fish flakes easily with a fork.
Serving
  1. Remove the bronzini from the grill and let rest for a couple of minutes.
  2. Serve with roasted seasonal vegetables and a squeeze of fresh lemon juice.
