Ingredients
  

Pasta and Vegetables
  • 8 ounces penne or rotini pasta Cook according to package instructions
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 piece bell pepper (red or yellow), chopped
  • 1/2 cup red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved Look for Kalamata olives in specialty stores
  • 1 cup feta cheese, crumbled Can substitute for dairy-free alternative
  • 1/2 cup fresh parsley, chopped
Dressing
  • 1/3 cup extra virgin olive oil Use high-quality olive oil for best flavor
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
Prepare the Dressing
  1. While the pasta is cooking, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl until well combined.
Combine the Ingredients
  1. Once the pasta is ready, drain it and rinse under cold water for a minute to stop the cooking process and cool it down. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
Dress the Salad
  1. Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly. Allow it to sit for at least 15 minutes to let the flavors develop.
Serve and Enjoy
  1. Give the salad one last gentle toss before serving. Enjoy it right away, or refrigerate for later.

Notes

Best served chilled. Store in an airtight container in the refrigerator for up to 3-5 days. Can be prepared ahead of time with components stored separately.
