Greek Chicken Bowls with Tzatziki

Ingredients
  

For the chicken marinade
  • 4 small small chicken breasts (about 1 and 1/4 pounds)
  • 1/4 cup olive oil (divided)
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice (divided)
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
For the bowls
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
For the tzatziki
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt (to taste)
  • 1 tablespoon fresh chopped dill

Method
 

Chicken Marinade
  1. Whisk together all the ingredients for the chicken marinade: olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.
  2. Pound the chicken to about 1/2 inch thick and place it in a shallow bowl or ziplock bag with the marinade. Let it marinate for at least 30 minutes, or up to a few hours.
Tzatziki Preparation
  1. Combine all the ingredients for the tzatziki: Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and chopped dill. Set this aside.
Cooking the Chicken
  1. Prepare the rice and veggies while the chicken marinates.
  2. Once the chicken is done marinating, preheat the air fryer to 380°F. Air fry the chicken on one side for 7 minutes, then flip and cook for 3 to 4 more minutes, or until the internal temperature reaches 165°F.
  3. Alternatively, heat a skillet with oil or butter over medium to low heat and fry the chicken for 7 to 8 minutes on one side, flip it, and fry until golden and cooked through.
  4. Let the chicken rest for 5 minutes away from heat, then slice it.
Assembling the Bowls
  1. Assemble your bowls by adding rice, veggies, sliced chicken, and tzatziki. Drizzle with additional olive oil and lemon juice based on your taste.

Notes

Store leftovers in airtight containers in the fridge, keeping the chicken, veggies, and tzatziki separate for freshness. They should stay good for about 3 to 4 days. Reheat the chicken and rice before serving again. For a more intense flavor, marinate the chicken overnight. Use grilled chicken for a smoky taste. Add olives or roasted red peppers for extra Mediterranean flair. You can switch up the protein and use shrimp or tofu instead of chicken, or use cauliflower rice for a low-carb meal.
