Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken breasts Use boneless, skinless chicken breasts.
  • 2 tablespoons Olive oil Extra virgin olive oil is recommended.
  • 3 cloves Garlic, minced
  • 2 tablespoons Lemon juice Freshly squeezed lemon juice is best.
  • 1 teaspoon Oregano Dried or fresh oregano can be used.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Freshly ground black pepper is preferred.
For the Bowls
  • 1 cup Quinoa or rice, cooked Prepare according to package instructions.
  • 1 cup Cucumber, chopped Peel if desired.
  • 1 cup Tomatoes, chopped Use cherry or regular tomatoes.
  • 1/2 cup Red onion, chopped Red onion adds a nice crunch.
  • 1/2 cup Feta cheese, crumbled Feel free to adjust the quantity.
For the Tzatziki Sauce
  • 1 cup Yogurt Greek yogurt works well.
  • 1/2 cup Cucumber, grated Remove excess moisture.
  • 2 cloves Garlic, minced
  • 1 tablespoon Dill, chopped Fresh dill enhances flavor.
  • 1 pinch Salt Adjust to taste.

Method
 

Preparation
  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. For the tzatziki sauce, mix yogurt with grated cucumber, minced garlic, chopped dill, and a pinch of salt.
Cooking
  1. Cook the marinated chicken on a grill or skillet until fully cooked.
  2. Meanwhile, prepare quinoa or rice according to package instructions.
Assembly
  1. Chop the cucumber, tomatoes, and red onion.
  2. Assemble the bowls by placing quinoa or rice at the base, adding sliced chicken, and topping with fresh veggies and feta cheese.
  3. Drizzle tzatziki sauce over the top before serving.

Notes

Store any leftovers in the fridge. Keep the chicken and veggies in an airtight container. The bowls can last for up to 3 days. If you have tzatziki sauce left over, store it separately to keep it fresh. Make sure to marinate the chicken long enough to absorb the flavors. Use fresh herbs for better taste. If you don’t have quinoa, rice is a good substitute. You can grill vegetables like peppers or zucchini to add more flavor.
