Notes
Store any leftovers in the fridge. Keep the chicken and veggies in an airtight container. The bowls can last for up to 3 days. If you have tzatziki sauce left over, store it separately to keep it fresh. Make sure to marinate the chicken long enough to absorb the flavors. Use fresh herbs for better taste. If you don’t have quinoa, rice is a good substitute. You can grill vegetables like peppers or zucchini to add more flavor.
