Ingredients
  

For the Chicken
  • 4 pieces Chicken breasts Boneless and skinless for easy cooking.
  • 2 tablespoons Olive oil For marinating.
  • 3 cloves Garlic Minced, for flavor.
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
For the Bowl
  • 1 cup Cucumber Diced, for freshness.
  • 1 cup Tomatoes Diced, for added flavor.
  • 1/2 cup Red onion Diced, for crunch.
  • 1/2 cup Feta cheese Crumble on top for richness.
  • 1/4 cup Fresh parsley Chopped, for garnish.
For the Tzatziki Sauce
  • 1 cup Yogurt Greek or plain, for creaminess.
  • 1/2 cup Cucumber Finely chopped for the sauce.
  • 1 clove Garlic Minced for flavor.
  • 1 tablespoon Dill Fresh or dried, for herbaceousness.
  • 1 tablespoon Lemon juice Freshly squeezed for zing.
  • 1 teaspoon Salt Adjust to taste.

Method
 

Marinate the Chicken
  1. Marinate the chicken with olive oil, minced garlic, lemon juice, salt, and pepper. Let it sit for at least 30 minutes.
Cook the Chicken
  1. Grill or pan-cook the chicken until fully cooked, then slice.
Prepare the Tzatziki Sauce
  1. Mix yogurt, finely chopped cucumber, minced garlic, dill, lemon juice, and salt to prepare the tzatziki sauce.
Assemble the Bowls
  1. In bowls, layer cooked quinoa or rice, grilled chicken, diced cucumbers, tomatoes, and red onion.
  2. Top with feta cheese, fresh parsley, and a generous dollop of tzatziki sauce.
  3. Serve immediately or store for meal prep.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. For freshness, store the tzatziki sauce separately.
