Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 cup olives
  • 1 red onion, thinly sliced
  • 1 piece cucumber, diced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
For Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 piece cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt to taste

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, oregano, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes on each side, or until it is cooked through.
Sauce Preparation
  1. While the chicken is grilling, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt in a bowl.
Assembly
  1. Once the chicken is done, let it rest for a few minutes before slicing it.
  2. To assemble the bowls, place cooked brown rice at the bottom.
  3. Top it with grilled chicken, diced cucumber, cherry tomatoes, red onion, feta cheese, and olives.
  4. Drizzle the tzatziki sauce over the top and serve.

Notes

Greek Chicken Bowls can be served warm or at room temperature. Great on their own or paired with pita bread. To store, place leftovers in an airtight container in the refrigerator for about 3 days. For best taste, assemble right before serving.
