  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
Garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes and sliced carrots.
  3. Drizzle with olive oil and maple syrup, then sprinkle with salt, pepper, and cinnamon. Toss until everything is well coated.
Cooking
  1. Spread the vegetables evenly on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes and carrots are tender and caramelized, stirring halfway through.
  3. Remove from the oven and let cool slightly. Garnish with fresh parsley if desired before serving.

Notes

Make sure to cut the sweet potatoes and carrots into similar sizes for even cooking. Adjust maple syrup to taste. Adding nuts like pecans or walnuts can add crunch and flavor. Store leftovers in an airtight container for 3 to 5 days.
