  • 2 large large cucumbers, thinly sliced Use fresh cucumbers for the best crunch and flavor.
  • 1 cup dairy-free yogurt or sour cream Feel free to use regular yogurt if not looking for a dairy-free option.
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon vinegar (white or apple cider)
  • to taste Salt and pepper Feel free to adjust the seasoning to suit your taste.

Preparation
  1. In a large bowl, combine the sliced cucumbers and salt. Let them sit for about 10 minutes to draw out excess moisture. Drain if necessary.
  2. In another bowl, mix together the dairy-free yogurt or sour cream, vinegar, chopped dill, salt, and pepper.
  3. Add the drained cucumbers to the dressing and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve chilled as a side dish. It pairs well with grilled meats, sandwiches, or as part of a picnic spread. Store any leftovers in an airtight container in the refrigerator and enjoy within a day or two. Before serving leftovers, give it a gentle stir to combine the ingredients again. You can also add slices of red onion, bell pepper, or cherry tomatoes for more color and freshness.
