  • 3 tablespoons olive oil 1 tablespoon for greasing the crockpot, remaining for sauce
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Garnish
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Preparation
  1. Lightly grease the crockpot with 1 tablespoon of olive oil.
  2. Arrange the halved baby potatoes and chicken breasts evenly in the crockpot.
  3. In a small bowl, mix together the remaining olive oil, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper.
  4. Pour the Parmesan garlic mixture over the chicken and potatoes, ensuring everything is well coated.
Cooking
  1. Cover and cook on low for 4 hours, or until the chicken is cooked through and the potatoes are tender.
  2. Garnish with fresh parsley before serving.
