Ingredients

For the chicken skewers
  • 2 lbs chicken tenders, thighs, or breast Ensure chicken is at room temperature for even cooking.
  • 2 tbsp olive oil
  • 1 stick butter
  • 8-10 cloves garlic, minced Use fresh garlic for a more robust flavor.
  • 1/2 cup Parmesan, grated Upgrade your ingredients for a bolder taste.
  • 1 tbsp hot sauce Add more if desired.
  • 2 teaspoons red pepper flakes For a spicier kick.
  • 1/3 cup fresh parsley, minced
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method

Preparation
  1. Cut the chicken into bite-sized pieces if using breasts or thighs.
  2. Toss chicken pieces in a bowl with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
  3. Marinate for about 10 minutes, then thread chicken onto skewers with space between each piece.
Making the Sauce
  1. In a medium saucepan over medium heat, melt the butter.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes, avoiding browning.
  3. Stir in grated Parmesan, hot sauce, red pepper flakes, and fresh parsley. Cook until the sauce thickens slightly, about 2-3 minutes.
Cooking
  1. Cook skewers on preheated grill or skillet for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F).
  2. Brush garlic Parmesan sauce onto skewers during the last minute of cooking.

Notes

Serve hot with a drizzle of garlic Parmesan sauce on top. Pairs well with side salads, garlic bread, or grilled vegetables. For drinks, consider pairing with chilled white wine or iced tea.
