Method
Preparation
- Cut the chicken into bite-sized pieces if using breasts or thighs.
- Toss chicken pieces in a bowl with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
- Marinate for about 10 minutes, then thread chicken onto skewers with space between each piece.
Making the Sauce
- In a medium saucepan over medium heat, melt the butter.
- Add minced garlic and sauté until fragrant, about 1-2 minutes, avoiding browning.
- Stir in grated Parmesan, hot sauce, red pepper flakes, and fresh parsley. Cook until the sauce thickens slightly, about 2-3 minutes.
Cooking
- Cook skewers on preheated grill or skillet for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F).
- Brush garlic Parmesan sauce onto skewers during the last minute of cooking.
Notes
Serve hot with a drizzle of garlic Parmesan sauce on top. Pairs well with side salads, garlic bread, or grilled vegetables. For drinks, consider pairing with chilled white wine or iced tea.
