Method
Preparation
- Pat chicken pieces dry and season both sides with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat, and sear chicken until golden, about 4-5 minutes per side. Remove and cover to keep warm.
Making the Sauce
- Melt butter in the same skillet, add minced garlic and sauté for 1-2 minutes.
- Pour in chicken broth and simmer for 2-3 minutes.
- Stir in heavy cream and cook for another 3-4 minutes.
- Gradually add parmesan cheese, stirring until melted and smooth. Season with salt and pepper.
Cooking the Pasta
- Cook pasta according to package instructions until al dente, usually about 8-10 minutes.
- Drain pasta and reserve some cooking water.
Combining the Dish
- Add drained pasta to the sauce and toss to coat, adding reserved pasta water if needed.
- Slice chicken and incorporate back into the skillet, stirring everything gently to combine.
- Garnish with fresh parsley before serving.
Notes
Adjust seasoning as desired. For a baked version, transfer the finished dish to a baking dish, top with breadcrumbs and parmesan, then bake until golden.
