Preparation
- Slice cucumbers into thin rounds, about 1/4 inch thick.
- In a mixing bowl, whisk together vinegar, water, sugar, and salt until dissolved.
- Stir in minced garlic and chopped fresh dill to the marinade.
- Place cucumber slices into a clean jar and pour the marinade over them.
- Seal the jar tightly and chill in the fridge for at least 2 hours, preferably overnight.
Notes
These cucumbers get better with time, making them ideal for make-ahead meal prep. They can be served at picnics or alongside grilled meats. Store in the fridge for up to two weeks.
