Garlic Butter Steak Bites and Potatoes

Ingredients
  

For the potatoes
  • 2 Tablespoons olive oil (divided use) Divided into two tablespoons for cooking
  • 1 pound Yukon Gold potatoes, cut into bite-sized cubes Can substitute with other potato types
For the steak
  • 1 pound sirloin steak, cut into bite-sized cubes Can use other cuts like ribeye or tenderloin
  • 1 teaspoon salt (divided use) Divided for seasoning potatoes and steak
  • 1 teaspoon pepper (divided use) Divided for seasoning potatoes and steak
  • 1 teaspoon garlic powder (divided use) Divided for seasoning potatoes and steak
  • 2 Tablespoons Kerrygold garlic and herb butter sticks Use more to taste

Method
 

Preparation
  1. Heat a large cast iron skillet over medium heat for a couple of minutes.
  2. Add 1 Tablespoon of olive oil and 1 Tablespoon of garlic herb butter to the skillet.
  3. Once the butter melts, add the potatoes and season with ½ teaspoon of garlic powder, ½ teaspoon of salt, and ½ teaspoon of pepper.
  4. Cover and cook on medium-low for 10–12 minutes, stirring occasionally.
  5. While the potatoes cook, season the steak cubes with ½ teaspoon of salt, ½ teaspoon of pepper, and ½ teaspoon of garlic powder.
Cooking
  1. Once the potatoes are golden and fork-tender, push them to one side of the pan or remove them.
  2. Add 1 Tablespoon of olive oil and 1 Tablespoon of garlic herb butter to the empty side, increasing heat to medium-high.
  3. Add the seasoned steak bites and sear for 3–4 minutes per side until cooked to the desired doneness.
  4. Lower heat to medium-low, add extra garlic butter if desired, and toss everything together.
  5. Taste and adjust seasoning, then serve.

Notes

Cut potatoes and steak into the same size cubes for even cooking. Avoid overcrowding the pan to ensure proper searing. Adjust seasoning to taste, adding more garlic powder or herbs if preferred. For storage, cool completely and keep in an airtight container in the fridge for up to three days.
