  • 12 oz spaghetti or your favorite noodles Use whatever you have on hand; it’ll be delicious regardless.
  • 1/2 cup unsalted butter Go for unsalted to control the saltiness.
  • 4-5 cloves fresh garlic, minced Fresh garlic gives the best flavor; avoid jarred garlic if possible.
  • 1/2 cup freshly grated Parmesan cheese Freshly grated melts better than pre-grated, plus it’s so much tastier.
  • 1/4 cup fresh parsley, chopped This adds a lovely pop of color and freshness to the dish.
  • to taste none Salt Just a pinch will highlight those flavors beautifully.
  • to taste none Freshly ground black pepper A little fresh grind adds depth and warmth to the dish.
  • 1 cup reserved pasta water This starchy water is gold when it comes to creating a silky sauce.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil over high heat. Once bubbling, add your spaghetti (or preferred noodles). Cook according to package instructions until al dente.
  2. While your pasta cooks, melt unsalted butter in a large skillet over medium heat. Add the minced fresh garlic and sauté until fragrant but not browned—about 1-2 minutes.
  3. Once your noodles are cooked, reserve about a cup of pasta water and drain the rest. Toss the drained noodles directly into the skillet with garlic butter.
  4. Sprinkle freshly grated Parmesan cheese over the hot noodles while tossing them in the skillet. Drizzle a little reserved pasta water to reach your desired creamy consistency. Season with salt and pepper to taste.
  5. Finally, sprinkle chopped fresh parsley on top for color and freshness before serving. Toss everything together and serve warm.

Notes

Don’t overcook the noodles. Use fresh ingredients for the best flavor. Remember to reserve pasta water.
