  • 4 large tortillas
  • 1/2 cup cream cheese, softened
  • 1/2 cup hummus
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1 carrot, shredded
  • 1 cup spinach or lettuce
  • Salt and pepper to taste

Method
 

Preparation
  1. Spread a layer of cream cheese and hummus over each tortilla.
  2. Arrange sliced cucumber, bell pepper, shredded carrot, and spinach evenly on top.
  3. Season with salt and pepper.
  4. Roll the tortillas tightly and slice them into pinwheels or halves.

Notes

Best served chilled. Present on a platter or individually wrap for a lunchbox treat. Pairs well with dips like extra hummus or yogurt-based dressing.
