  • 2 cups chopped romaine lettuce Use fresh romaine for the best flavor.
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled Substitute with goat cheese for a different flavor.
  • 2 pieces grilled chicken breasts, sliced Marinate in olive oil and lemon juice for extra flavor.
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Adjust based on your preference.

Preparation
  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  2. Add the sliced grilled chicken on top.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately and enjoy!

Notes

This salad is best served right after it’s made. Store leftovers in an airtight container in the refrigerator, keeping the dressing separate until ready to eat. Consume within 2 days for the best taste and freshness.
