Preparation
  1. Flatten each slice of bread using a rolling pin to about 1/4 inch thick.
  2. In a small bowl, mix the cream cheese, sugar, and vanilla extract until smooth.
  3. Spread the cream cheese mixture evenly on each slice of flattened bread, leaving a little space at the edges.
  4. Carefully roll each slice of bread tightly around the filling and place them seam side down.
  5. In a bowl, whisk together the eggs, milk, and cinnamon until well combined.
  6. Heat a skillet over medium heat and melt some butter to coat it.
Cooking
  1. Dip each roll-up in the egg mixture, ensuring they are coated thoroughly.
  2. Place roll-ups seam side down in the skillet and cook until golden brown, about 2-3 minutes per side.
  3. Remove from the skillet, sprinkle with powdered sugar, and serve warm.

Notes

You can prep the roll-ups ahead of time! Assemble them, place them in the fridge for a few hours, and cook them fresh when you're ready. Cook in batches for even browning.
