Preparation
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the roast with salt and pepper. Brown the roast on all sides, then remove it from the pot.
- Add sliced onions and garlic to the pot; sauté until they are caramelized.
- Return the roast to the pot, then add beef broth, French onion soup, and Worcestershire sauce. Bring to a simmer.
- Cover the pot and transfer it to the oven. Cook for 3-4 hours or until the roast is tender.
- Let the roast rest before slicing.
- Serve it with the pan juices and garnish with thyme or parsley.

This dish pairs well with mashed potatoes, crusty bread, or a fresh salad. Consider adding sautéed vegetables on the side.
