Preparation
  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the roast with salt and pepper. Brown the roast on all sides, then remove it from the pot.
  4. Add sliced onions and garlic to the pot; sauté until they are caramelized.
  5. Return the roast to the pot, then add beef broth, French onion soup, and Worcestershire sauce. Bring to a simmer.
  6. Cover the pot and transfer it to the oven. Cook for 3-4 hours or until the roast is tender.
  7. Let the roast rest before slicing.
  8. Serve it with the pan juices and garnish with thyme or parsley.

Notes

This dish pairs well with mashed potatoes, crusty bread, or a fresh salad. Consider adding sautéed vegetables on the side.
