Preparation
  1. Start by cooking your macaroni according to the package instructions until al dente. Drain and set aside.
  2. Melt 2 tablespoons of butter over medium heat in a skillet. Add the sliced onions and cook for 15-20 minutes, until golden brown.
  3. In a separate saucepan, melt another tablespoon of butter over medium heat. Whisk in the flour to form a roux, then gradually add the milk, stirring continuously until thickened.
  4. Season the cheese sauce with salt, pepper, garlic powder, and thyme. Stir in the shredded cheese until melted.
Assembly and Baking
  1. In a baking dish, combine the cooked macaroni, caramelized onions, and cheese sauce. Sprinkle with breadcrumbs if desired.
  2. Preheat your oven to 350°F (175°C) and bake for 20-25 minutes until bubbly and golden brown.

Notes

For a kick of heat, add crumbled red pepper flakes. This dish pairs well with a light salad and crusty bread. Great for meal prep and delicious as leftovers!
