  • 2.5 cups all-purpose flour

  • 0.5 teaspoon salt
  • 1 cup diced fresh strawberries Fresh strawberries are preferred but frozen will work if thawed and drained.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  6. Carefully fold in the diced strawberries.
Baking
  1. Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
  2. Bake for 12-15 minutes or until the edges are lightly golden and the cookies are puffy.
  3. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  4. Dust with powdered sugar before serving.
