Preparation
- Preheat your oven to 180C/350F.
- In a bowl, combine all the ingredients except for the shredded carrot, and blend them with an immersion blender or a regular blender until smooth.
- Stir in the shredded carrot until well combined.
- Line a small baking pan (about 7×7 inches or 18cm) with parchment paper. Spread the cake mixture evenly in the pan.
Baking
- Bake in the preheated oven for 20-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool, slice it, and enjoy!
Notes
Store any leftover carrot cake in an airtight container in the refrigerator for 3-4 days. Freeze individual slices for later enjoyment.
