Ingredients
  

Main Ingredients
  • 2 eggs 2 eggs
  • ½ cup ½ cup honey
  • 2 medium 2 carrots, shredded
  • 1 cup 1 cup oats
  • 1/2 tsp 1/2 tsp baking soda
  • 1 tbsp 1 tbsp cinnamon
  • 1/4 cup 1/4 cup butter, room temperature
  • 1 tsp 1 tsp vanilla

Method
 

Preparation
  1. Preheat your oven to 180C/350F.
  2. In a bowl, combine all the ingredients except for the shredded carrot, and blend them with an immersion blender or a regular blender until smooth.
  3. Stir in the shredded carrot until well combined.
  4. Line a small baking pan (about 7×7 inches or 18cm) with parchment paper. Spread the cake mixture evenly in the pan.
Baking
  1. Bake in the preheated oven for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool, slice it, and enjoy!

Notes

Store any leftover carrot cake in an airtight container in the refrigerator for 3-4 days. Freeze individual slices for later enjoyment.
