Preparation
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef or Italian sausage, breaking it apart as it cooks. Add chopped onions and bell peppers, cooking until tender, about 5-7 minutes. Drain any excess fat.
- Stir in the pizza sauce, pepperoni, Italian seasoning, salt, and pepper.
- In a large mixing bowl, combine the cooked egg noodles with the meat mixture.
Assembly
- Spread half of the noodle mixture in a greased casserole dish. Top with half of the mozzarella cheese.
- Layer the remaining noodle mixture on top and finish with the rest of the mozzarella cheese.
Baking
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
Notes
Don’t overcook the noodles as they will continue to cook in the oven. Feel free to mix in provolone or even a little Parmesan for depth. Use fresh vegetables for better flavor.
