Ingredients for Egg Bites
  • 1 serving Cooking spray For greasing the muffin pan
  • 8 large eggs Large eggs are preferred for the best texture
  • 1 cup cottage cheese (4% or low-fat) Can use low-fat variety for lighter option
  • 1/2 cup shredded sharp cheddar cheese Feel free to experiment with different cheeses
  • 1/4 teaspoon fine salt Adjust to taste
  • Pinch black pepper For seasoning
  • Fresh chives, roughly chopped For garnish and added flavor

Method
 

Preparation
  1. Mist the cups of a silicone muffin pan lightly with cooking spray.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. In a blender, blend together the eggs, cottage cheese, cheddar cheese, salt, and pepper until smooth.
  4. Divide the egg mixture into the cups of the muffin pan, filling each about half full.
  5. Sprinkle the tops with chopped chives.
Baking
  1. Bake for 20-22 minutes or until the muffins are slightly firm to the touch in the center.
  2. Remove the pan from the oven and let the egg bites cool for a few minutes before removing them.

Notes

Egg bites can be served warm or cold, great on their own or with a side of fruit or salad. Store them in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
