Preparation
- Mist the cups of a silicone muffin pan lightly with cooking spray.
- Preheat the oven to 350 degrees F (175 degrees C).
- In a blender, blend together the eggs, cottage cheese, cheddar cheese, salt, and pepper until smooth.
- Divide the egg mixture into the cups of the muffin pan, filling each about half full.
- Sprinkle the tops with chopped chives.
Baking
- Bake for 20-22 minutes or until the muffins are slightly firm to the touch in the center.
- Remove the pan from the oven and let the egg bites cool for a few minutes before removing them.
Notes
Egg bites can be served warm or cold, great on their own or with a side of fruit or salad. Store them in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
