  • 4 cups seedless watermelon cubed and frozen
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp maple syrup or honey optional, for sweetness
  • mint leaves optional, for garnish

  • Freezer-safe Container

Method
 

  1. Cut watermelon into cubes and lay on a baking sheet. Freeze for at least 3 hours or until solid.
  2. Add frozen watermelon to a high-speed blender or food processor. Add lime juice and sweetener, if using. Blend until smooth, scraping sides as needed.
  3. Serve immediately for soft-serve texture, or transfer to a container and freeze for 1-2 hours for a firmer scoop.
  4. Garnish with mint leaves or lime wedges and enjoy!

Notes

Use ripe watermelon for best flavor. If the blend is too hard, let watermelon cubes thaw slightly. Add coconut milk for a creamy version or chili for a spicy kick.
