  • 1 jar Indian simmer sauce
  • 2 cups mixed vegetables (such as bell peppers, carrots, and peas)
  • 1 can chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Method
 

Cooking
  1. In a large pot, sauté the diced onion and minced garlic until fragrant.
  2. Add the mixed vegetables and sauté for another 5 minutes.
  3. Stir in the jar of Indian simmer sauce and vegetable broth.
  4. Add the chickpeas and mix well.
  5. Bring to a simmer and let cook for about 30 minutes.
  6. Serve hot with rice or bread.

Notes

For a spicier kick, you can add some chili powder or fresh chilies while cooking. Feel free to swap the mixed vegetables based on your preferences. Adding a splash of coconut milk can give the curry a creamier texture. It stores well in the fridge or freezer, making it great for meal prep.
