Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, combine the melted butter and granulated sugar until smooth and shiny. Add in the eggs and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, followed by the brewed coffee. Mix until just combined.
- Pour the brownie mixture into the prepared baking pan and spread it evenly.
Baking
- Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
Topping Preparation
- While the brownies cool, whip the mascarpone cheese, heavy cream, and powdered sugar together until combined and fluffy.
- Once the brownies are fully cooled, spread the mascarpone mixture over the top.
- Dust with cocoa powder before serving.
Notes
Store in an airtight container for up to 3 days in the fridge. Brownies can be frozen for up to 3 months. Warm gently in the oven or microwave to reheat.
