Brownie Base

  • 1 cup granulated sugar Sweetens up the brownies.
  • 2 large eggs Brings it all together.
  • 1 teaspoon vanilla extract Adds a warm and fragrant flavor.
  • 1/2 cup strong brewed coffee, cooled Intensifies the chocolate flavor.
Topping
  • 1 cup mascarpone cheese The creamy topping for the brownies.
  • 1/2 cup heavy cream Lightens up the mascarpone.
  • 2 tablespoons powdered sugar Sweetens the topping.
  • Cocoa powder for dusting Adds richness and appeal.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine the melted butter and granulated sugar until smooth and shiny. Add in the eggs and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, followed by the brewed coffee. Mix until just combined.
  5. Pour the brownie mixture into the prepared baking pan and spread it evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
Topping Preparation
  1. While the brownies cool, whip the mascarpone cheese, heavy cream, and powdered sugar together until combined and fluffy.
  2. Once the brownies are fully cooled, spread the mascarpone mixture over the top.
  3. Dust with cocoa powder before serving.

Notes

Store in an airtight container for up to 3 days in the fridge. Brownies can be frozen for up to 3 months. Warm gently in the oven or microwave to reheat.
