Ingredients
  

Main ingredients
  • 1 pound ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • Salt and pepper to taste Add according to preference.

Method
 

Preparation
  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onion and bell pepper to the pot and cook until softened.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and beef broth. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
Slow Cooker Instructions
  1. Brown the ground beef and transfer it to the slow cooker.
  2. Add all other ingredients and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
  1. Serve hot, garnished with toppings like shredded cheese, sour cream, cilantro, tortilla chips, or sliced jalapeños.

Notes

To make spicier, add diced jalapeños or hot sauce. For a thicker soup, add a tablespoon of flour or cornmeal. Can serve with warm tortillas or bread.
