- In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and bell pepper to the pot and cook until softened.
- Stir in the black beans, corn, diced tomatoes, taco seasoning, and beef broth. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
Slow Cooker Instructions
- Brown the ground beef and transfer it to the slow cooker.
- Add all other ingredients and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
- Serve hot, garnished with toppings like shredded cheese, sour cream, cilantro, tortilla chips, or sliced jalapeños.
Notes
To make spicier, add diced jalapeños or hot sauce. For a thicker soup, add a tablespoon of flour or cornmeal. Can serve with warm tortillas or bread.
