  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 14-ounce can black beans, drained & rinsed
  • 1 12-ounce can corn, drained
  • 1 15.5-ounce jar salsa
  • 2 cups shredded Mexican cheese blend (or cheddar), divided
Optional Toppings
  • tomatoes to taste
  • cilantro to taste
  • scallions to taste
  • avocado to taste
  • black olives to taste
  • sour cream to taste
  • lettuce to taste

Method
 

Preparation
  1. Preheat the oven to 350°F and move the rack to the middle position.
  2. Add the olive oil and ground beef to a skillet. Cook over medium-high heat for about 5 minutes, breaking up the meat as it cooks.
  3. Stir in the onion, chili powder, garlic powder, and ground cumin, continuing to cook for another 5 minutes.
  4. Layer the crushed Doritos in a 9x13 casserole dish.
  5. If needed, spoon out any excess fat from the skillet.
  6. Stir in the black beans, corn, salsa, and half of the cheese, letting everything warm through until the cheese melts.
  7. Spoon the beef mixture over the Doritos and top with the remaining cheese.
Cooking
  1. Bake uncovered for 15-20 minutes until hot and the cheese is melty.
  2. Serve with your favorite toppings.

Notes

You can prepare the casserole ahead of time and bake it when ready. For extra flavor, try adding diced bell peppers or jalapeños. Substitute ground beef with ground turkey or chicken for a lighter option. Consider using taco seasoning mix for convenience. For a vegetarian version, skip the ground beef and increase the beans or add veggies.
