Preparation
- In a large mixing bowl, combine the powdered sugar and meringue powder.
- Add the water and vanilla extract to the bowl.
- Using an electric mixer, beat on medium speed until the icing forms stiff peaks, about 7-10 minutes.
- If desired, divide the icing into separate bowls and add food coloring to achieve desired colors.
- Use the icing immediately to decorate cookies or store it in an airtight container for up to 2 weeks.
- For flooding consistency, add a little bit of water until the icing flows easily.
Notes
To prevent icing from drying out, keep a damp towel over it when not in use. Store leftovers in an airtight container in the fridge for up to 2 weeks.
