Easy Mongolian Ground Beef Noodles

Ingredients
  

For the noodles
  • 8 oz noodles (spaghetti, udon, or rice noodles)
For the beef mixture
  • 1 lb ground beef
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch piece ginger, minced
  • ¼ cup soy sauce (or tamari for gluten-free)
  • ¼ cup brown sugar
  • ½ cup beef broth
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • ½ tsp red pepper flakes (optional)
  • ½ cup green onions, chopped for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

Cooking the Noodles
  1. Boil the noodles according to package instructions. After cooking, drain and set them aside.
Cooking the Beef
  1. In a large pan, heat vegetable oil over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Drain excess fat from the pan.
Sautéing Aromatics
  1. Add minced garlic and ginger to the pan with the beef. Cook for about 1 minute until fragrant.
Making the Sauce
  1. In a bowl, mix together soy sauce, brown sugar, beef broth, hoisin sauce, and red pepper flakes.
  2. Pour this mixture into the pan with the beef and stir well.
Thickening the Sauce
  1. Mix the cornstarch with water to create a slurry. Add this to the pan.
  2. Stir and let it simmer until the sauce thickens.
Combining with Noodles
  1. Add the cooked noodles to the pan and toss everything until the noodles are well coated with the sauce.
Garnishing and Serving
  1. Sprinkle chopped green onions and sesame seeds over the dish before serving.

Notes

Use fresh ingredients for the best flavor. Adjust the red pepper flakes to your taste. Add vegetables like bell peppers or broccoli for extra nutrition. You can switch to ground turkey or chicken, and try different noodles.
