Ingredients
  

Base and Topping
  • 1 box cake mix (any flavor, but vanilla or yellow is best) For a richer flavor, consider using a butter cake mix.
  • 1/2 cup unsalted butter, melted Ensure butter is melted before mixing for the best texture.
Filling
  • 1 can lemon pie filling Alternatively, make your own filling with lemon juice, sugar, and cornstarch.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix and melted butter until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. Spread the lemon pie filling evenly over the crust.
  5. Sprinkle the remaining crumb mixture on top of the lemon filling.
Baking
  1. Bake for about 25-30 minutes or until golden brown.
  2. Allow to cool before cutting into bars.

Notes

These bars are best enjoyed at room temperature. Pair with tea or coffee for a delightful snack. Store in an airtight container in the refrigerator for up to 5-7 days. Can be frozen for up to three months.
