  • 1 lb ground beef or Italian sausage
  • 1 onion chopped
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles broken into pieces
  • 6 cups beef broth

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • fresh basil or parsley optional, for garnish

Method
 

  1. Heat a large soup pot over medium heat. Add the ground beef or sausage and cook until browned, breaking it up as it cooks. Drain excess grease.
  2. Add chopped onion and minced garlic. Sauté until softened and fragrant, about 3–5 minutes.
  3. Stir in crushed tomatoes, tomato paste, and Italian seasoning. Cook for 2 minutes to deepen the flavors.
  4. Pour in beef broth and bring to a gentle boil. Add broken lasagna noodles and simmer until tender, about 12–15 minutes.
  5. Stir in mozzarella and Parmesan cheese until melted. Ladle soup into bowls, top with dollops of ricotta, and garnish with herbs if desired.

Notes

For best results, break the noodles into small pieces and serve with a dollop of ricotta on top. You can make the soup base ahead and add noodles fresh to avoid sogginess. To make it vegetarian, skip the meat and use vegetable broth with more vegetables.
