Ingredients
  

Strawberry Cake Layer
  • 2 pieces eggs
  • 1/2 cup avocado oil
  • 1 cup fresh strawberries, chopped
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cardamom
Pistachio Kataifi Layer
  • 1/4 cup pistachio butter
  • 3 tbsp kataifi
  • 1 tbsp butter
Topping
  • 1/2 cup fresh strawberries
  • 1/2 cup chocolate

Method
 

Preparation of Strawberry Cake Layer
  1. Preheat the oven to 350°F (177°C).
  2. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, cardamom, and sugar.
  3. Add the wet ingredients: eggs and avocado oil, and mix well.
  4. Rinse and chop the strawberries, then add them to the batter and stir gently.
  5. Line a 9x9 baking pan with parchment paper, pour the batter in, and bake for 30 minutes.
  6. Let the cake cool completely.
Preparation of Pistachio Kataifi Layer
  1. In a medium pan, toast the kataifi and butter over medium heat until golden.
  2. Mix in the pistachio butter until well combined.
  3. Spread this mixture over the cooled cake.
Topping
  1. Rinse and chop more strawberries, then place them on top of the pistachio layer.
  2. Melt the chocolate in a microwave-safe dish.
  3. Drizzle the melted chocolate over the strawberries.
Serving
  1. Cut the cake into squares and serve it on a plate. You can enjoy it plain or add a dollop of whipped cream on top.

Notes

Use fresh, ripe strawberries for the best flavor. You can customize this cake by adding other fruits or chopped nuts. Store any leftovers in an airtight container in the refrigerator for 3 to 4 days.
