Ingredients
  

Salad ingredients
  • 4 medium medium cucumbers, peeled and thinly sliced
  • 1 unit Vidalia onion, thinly sliced Sweet onions like Vidalia work best.
Dressing ingredients
  • 1/2 cup water
  • 2 cups white wine vinegar Can substitute apple cider vinegar.
  • 1/4 cup granulated monk fruit sweetener Or sugar.
  • to taste unit Salt and pepper Use quite a bit for best flavor.

Method
 

Preparation
  1. In a bowl, mix the water, white vinegar, and monk fruit sweetener until the sweetener is completely dissolved. Season with salt and pepper to taste.
  2. In a large bowl or jar, combine the cucumber slices and onion slices. Pour the dressing over the cucumber and onion mixture. Toss everything together until the cucumbers and onions are well coated with the dressing.
  3. Cover the bowl and let the salad marinate in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
Serving
  1. Serve the salad chilled as a side dish. It pairs well with grilled meats, sandwiches, or as a light lunch on its own.

Notes

The salad stores well for 4 days in the fridge. Maintain its crispness by keeping it well-covered.
