Main Ingredients
  • 1.5 pounds chicken breasts or thighs boneless, skinless
  • 10.5 oz cream of chicken soup 1 can
  • 10 oz diced tomatoes with green chilies 1 can
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 8 oz cream cheese cubed
  • 2 cups shredded cheddar cheese
  • 12 oz spaghetti noodles broken in half

Method
 

  1. Add chicken, cream of chicken soup, diced tomatoes, chicken broth, garlic powder, onion powder, salt, and pepper to the slow cooker. Stir to combine.
  2. Cover and cook on LOW for 4-6 hours or HIGH for 2.5-3 hours until chicken is tender.
  3. Remove chicken and shred with two forks. Return to the slow cooker and stir to mix.
  4. Add cream cheese and shredded cheddar cheese. Cover and let melt for 10-15 minutes. Stir until smooth and creamy.
  5. Meanwhile, cook spaghetti according to package directions. Drain and add to the slow cooker. Stir until well combined.

Notes

For best results, cook pasta separately to avoid mushiness. Add milk to thin the sauce if needed. Use pre-cooked or rotisserie chicken to save time.
