- In a large pot, brown the ground beef over medium heat. Drain extra fat.
- Add the diced onion and minced garlic. Cook until soft.
- Stir in chili powder and cumin. Cook for about 1 minute.
- Add the diced tomatoes, kidney beans, black beans, and beef broth (if using).
- Bring the mixture to a boil. Then reduce heat and let it simmer for at least 30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot.
Notes
Feel free to add vegetables like bell peppers or corn, and let the chili sit longer to deepen flavors. For vegetarian chili, substitute ground beef with more beans or lentils.
