Ingredients
  

Tortilla Preparation
  • 8 pieces corn tortillas (6 inches)
  • 1 tablespoon vegetable oil For brushing the tortillas
Filling
  • 8.5 ounces corn, drained
  • 1.5 cups shredded cooked chicken Store-bought rotisserie chicken can be used for faster preparation.
  • 8 ounces salsa Adjust the spice level by using spicy salsa.
  • 2 tablespoons taco seasoning Can be store-bought or homemade.
  • 15 ounces black beans, drained and rinsed
  • 2 cups colby jack cheese, shredded Used as a topping
Toppings
  • Fresh cilantro, for topping
  • Diced tomatoes, for topping

Method
 

Preparation of Tortillas
  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Lay the tortillas on a rimmed baking sheet.
  3. Brush one side of each tortilla with vegetable oil, ensuring it covers well but doesn’t pool.
  4. Flip the tortillas and brush the other side with oil.
  5. Bake the tortillas for 10 minutes, flipping them halfway through, monitoring every 2 to 3 minutes to prevent burning.
Preparing the Filling
  1. In a medium saucepan, combine the shredded chicken, salsa, taco seasoning, corn, and black beans over medium heat.
  2. Stir occasionally for about 5 minutes.
Assembling the Tostadas
  1. Add 1/2 cup of the chicken mixture to each baked tortilla and top with 1/4 cup of cheese.
  2. Return the tortillas to the oven for another 5 minutes or until the cheese melts.
  3. Top your tostadas with fresh cilantro and diced tomatoes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Keep toppings separate to maintain the crispiness.
