Method
Preparation of Tortillas
- Preheat your oven to 450 degrees Fahrenheit.
- Lay the tortillas on a rimmed baking sheet.
- Brush one side of each tortilla with vegetable oil, ensuring it covers well but doesn’t pool.
- Flip the tortillas and brush the other side with oil.
- Bake the tortillas for 10 minutes, flipping them halfway through, monitoring every 2 to 3 minutes to prevent burning.
Preparing the Filling
- In a medium saucepan, combine the shredded chicken, salsa, taco seasoning, corn, and black beans over medium heat.
- Stir occasionally for about 5 minutes.
Assembling the Tostadas
- Add 1/2 cup of the chicken mixture to each baked tortilla and top with 1/4 cup of cheese.
- Return the tortillas to the oven for another 5 minutes or until the cheese melts.
- Top your tostadas with fresh cilantro and diced tomatoes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Keep toppings separate to maintain the crispiness.
