  • 1 cup imitation crab meat
  • 1 large avocado Diced.
  • 1/4 cup green onions Chopped.
Dressing Ingredients
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce Use gluten-free soy sauce for gluten-free options.
  • 1 teaspoon sesame oil

Preparation
  1. Slice the cucumber into thin rounds and place in a bowl.
  2. Add the imitation crab meat, diced avocado, and chopped green onions to the bowl.
  3. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and salt.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Garnish with sesame seeds before serving.
  6. Serve chilled.

Notes

For best taste, serve the salad cold. Store any leftovers in an airtight container in the refrigerator and consume within a couple of days. Use a sharp knife for cleaner cuts of cucumber and choose ripe avocados for a creamier texture. Customize the salad with additional ingredients like bell peppers or seaweed, or add heat with jalapeños or chili flakes.
