- In a large mixing bowl, cream together the melted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Add the eggs and vanilla extract, and mix until smooth.
- Add the flour, cinnamon, cornstarch, baking soda, and baking powder to the mixture, then stir until just combined.
- Fold in the pecans until they are evenly distributed throughout the dough.
- Chill the dough for 30-45 minutes to make it easier to handle.
Baking
- Scoop out small portions of the dough and roll them into balls. If the dough seems a bit crumbly, the warmth of your hands will help it come together.
- Place the dough balls on a cookie tray lined with parchment paper.
- Bake at 350°F for about 11-14 minutes, or until the cookies turn golden brown and are firm around the edges.
Notes
These cookies are best enjoyed fresh from the oven, warm with a glass of milk or a cup of coffee. Store in an airtight container at room temperature for about a week, or freeze for longer storage.
