Cookie Dough Ingredients
  • 1 cup Butter (Melted, slightly warm) Make sure the butter is warm but not hot for the best texture.
  • 2 large Eggs
  • 1.5 teaspoons Vanilla extract
  • 2.5 cups All-purpose flour For a gluten-free version, use gluten-free all-purpose flour blend.
  • 1 cup Brown sugar
  • 0.5 cup Granulated sugar
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Cornstarch
  • 0.5 teaspoon Baking powder
  • 1.5 cups Pecans (Roughly chopped) You can substitute walnuts for pecans if preferred.

Preparation
  1. In a large mixing bowl, cream together the melted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  2. Add the eggs and vanilla extract, and mix until smooth.
  3. Add the flour, cinnamon, cornstarch, baking soda, and baking powder to the mixture, then stir until just combined.
  4. Fold in the pecans until they are evenly distributed throughout the dough.
  5. Chill the dough for 30-45 minutes to make it easier to handle.
Baking
  1. Scoop out small portions of the dough and roll them into balls. If the dough seems a bit crumbly, the warmth of your hands will help it come together.
  2. Place the dough balls on a cookie tray lined with parchment paper.
  3. Bake at 350°F for about 11-14 minutes, or until the cookies turn golden brown and are firm around the edges.

Notes

These cookies are best enjoyed fresh from the oven, warm with a glass of milk or a cup of coffee. Store in an airtight container at room temperature for about a week, or freeze for longer storage.
