Main Ingredients
  • 2 ripe bananas Make sure they are overripe for sweetness.
  • 1 cup oats Use gluten-free oats if necessary.
  • 1/2 cup peanut butter Smooth or crunchy can be used.
  • 1/4 cup honey or maple syrup Can substitute with agave syrup.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the bananas using a fork until smooth and creamy, about 1-2 minutes.
  3. Add the oats, peanut butter, honey (or maple syrup), baking soda, and vanilla extract to the mashed bananas. Stir until everything is well combined, about 2 minutes of mixing.
  4. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes until the edges are golden brown and the cookies look firm.
  2. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best enjoyed warm. Store in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
