Ingredients
  

For the Croissants
  • 5 pieces Butter croissants Use day-old croissants for best results.
For the Almond Filling
  • 1/2 cup unsalted Butter, room temp Ensure the butter is at room temperature.
  • 1/2 cup Granulated sugar To sweeten the filling.
  • 1/2 teaspoon Salt
  • 2 pieces Eggs
  • 1 cup Almond flour
  • 2 tablespoons All-purpose Flour
For the Simple Syrup
  • 1 cup Water
  • 1/2 cup Granulated sugar (for simple syrup)
For Topping
  • 10 tablespoons Sliced almonds
  • 3 tablespoons Powdered sugar For dusting before serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, combine the water and 1/2 cup of granulated sugar for the simple syrup. Heat until the sugar dissolves, then let it cool.
  3. For the almond filling, mix the room temperature butter, salt, and remaining granulated sugar until creamy.
  4. Add the eggs and mix well. Then, add the almond flour and all-purpose flour until smooth.
  5. Transfer the almond cream to a piping bag.
  6. Slice the day-old croissants in half and brush the insides with simple syrup.
  7. Fill the croissants with the almond cream, reassemble them, and spread more filling on top.
  8. Sprinkle sliced almonds over the filling.
Baking
  1. Bake for 15 to 20 minutes until golden brown and set.
  2. Let cool and dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. Pairs beautifully with coffee or tea. Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
