Ingredients
  

Stir Fry
  • 1 lb ground turkey lean
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 3 cups mixed vegetables chopped bell peppers, broccoli, carrots, snap peas
  • green onions sliced, for garnish
  • sesame seeds for garnish
  • rice or noodles for serving

Method
 

  1. Heat a large skillet over medium-high heat. Add ground turkey and cook until browned and cooked through. Drain excess fat.
  2. In a small bowl, whisk together soy sauce, honey, garlic, ginger, rice vinegar, and cornstarch. Set aside.
  3. Add mixed vegetables to the skillet. Sauté for 4–5 minutes until just tender.
  4. Pour the sauce over the turkey and vegetables. Stir and simmer for 2–3 minutes until the sauce thickens.
  5. Serve over rice or noodles. Garnish with green onions and sesame seeds.

Notes

Use pre-chopped or frozen vegetables to save time. Adjust sauce sweetness or saltiness to taste. Great for meal prep and leftovers!
