  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
For Rolling
  • 1 cup granulated sugar (for rolling)
  • 36 pieces chocolate kisses, unwrapped

Method
 

Baking Preparation
  1. Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking the cookies.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt until combined.
  3. Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing until fully incorporated. Then add the vanilla extract and mix until combined.
  5. Combine Wet and Dry: Gradually add the flour mixture to the butter mixture, stirring until just combined.
  6. Shape Cookies: Roll the dough into 1-inch balls, then roll them in granulated sugar and place them on ungreased baking sheets, spacing them about 2 inches apart.
Baking and Finishing
  1. Bake: Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden and the centers are set.
  2. Add Chocolate Kisses: Immediately press a chocolate kiss into the center of each cookie and return to the oven for an additional 1-2 minutes.
  3. Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
