  • 1 cup assorted vegetables (e.g., bell peppers, carrots, snap peas) Use any seasonal veggies you love; they add color and texture!
  • 1 teaspoon sesame oil This nutty oil elevates the overall flavor—just a dash will do!
  • green onions to taste for garnish A sprinkle on top adds freshness and a pop of color!
Sauces
  • 2 tablespoons soy sauce The umami bomb that ties all the flavors together—adjust to taste!
  • 1 tablespoon oyster sauce (optional) Adds depth to the dish, but it’s just as tasty without!

Method

Preparation
  1. Cook the lo mein noodles according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant and golden.
  4. Add the assorted vegetables and stir-fry for 2-3 minutes until tender-crisp.
  5. Stir in the cooked lo mein noodles along with soy sauce, oyster sauce (if using), and sesame oil. Toss until noodles are well coated.
  6. Serve hot, garnished with freshly chopped green onions.

Notes

Don’t overcook the noodles; keep them a little undercooked before adding them to the stir-fry to avoid mushiness. Feel free to prep your veggies in advance for a quicker cooking process.
